Vintage Notes

The 2001 Cabernet Sauvignon has dark rich, aromas of cherries and cassis with rich vanilla undertones. The mouth feel is just superb, with depth of flavors and a wonderfully concentrated chocolate and cinnamon finish.

Vineyards

The 2001 growing season was hot with good ripening fruit that did give us wines of excellent structure and depth. The color extract was quite developed and gave us a deep garnet Cab in 2001. Vineyards that were again stressed for water in the later parts of the growing cycle showed Cabernet with good weight. Here is the breakdown of my Cabernet vineyard sources used in the 2001 vintage:

Wine Making

Pasteur Red yeast was used at a Max fermentation of 88 degrees F
Pump-overs 2 to 3 times daily until fermented to dryness
7200 cases produced
Bottled 2/03Malo-lactic positive
Aged in both American and French oak barrels
